Ingredients
¾cupvegan milkI used oat milk
½cuprolled oats
2cupsall-purpose flour
½cupwhite granulated sugar
½cupHemp Hearts
2teaspoonsbaking powder
½teaspoonbaking soda
2tablespoonscornstarch
¼teaspoonsalt
1teaspoonground cinnamon
1teaspoonpumpkin spice
1cuppumpkin puree
½cupwhite granulated sugar
2/3cupunsweetened applesauce
¼cupavocado oilor other neutral flavoured oil
1teaspoonvanilla extract
Instructions
Preheat the oven to 375. Line a muffin tin with muffin holders and set aside.
In a medium sized bowl combine the milk and rolled oats. Set aside to let soften.
While the oats soak, mix together the flour, sugar, hemp hearts, baking powder, baking soda, corn starch, salt, and spices.
To the soaking oats, add the pumpkin puree, oil, applesauce and vanilla extract. Stir to combine. Add the wet ingredients into the dry ingredients, and mix just until everything is blended. Do not over-mix.
Use an ice cream scoop to fill the batter into the muffin tin. Bake for 20-25 minutes until a tooth pick inserted in the middle comes out clean.
Remove from the oven and allow muffins to cool before removing from pan.
